What’s for Lunch?

Okay, I have been thinking long and hard about what I want to blog. I have a couple recipes [Sweet Potato Fritters, Chopped Thai Salad] that have been sitting in the draft section of my blog posts [FOR MONTHS], and I just haven’t taken the time to search for the photos or remake the recipes to make sure that everything is right.

So, I am showing you some of the meals I had during my internship.

Oh. Backup. Update. I’M A DIETITIAN! Yes. A registered and licensed dietitian in the state of North Carolina. [Insert party emoji] How the heck does that sound!? Pretty stinkin’ good. I finished my internship in early May, took my exam late May, and a few weeks ago I accepted a job in the area at a hospital. I will write a post on all of that soon, but I wanted to throw a food post in first.

During my internship, I had to pack lunch almost every day. This was a struggle sometimes but a great learning experience and let’s just say I was eating pretty dang well!

Here are some ideas for lunches and snacks. I eat a morning snack and afternoon snack, so that’s why it looks like so much food, haha! I find lunches to be hard (as well as dinners.. planning can be tough!) so hopefully you can find some inspiration.

Oh, and here’s how this is going to go down: M = meal, so there’s M1-5 (breakfast, snack, lunch, snack, dinner). That means if M2 = morning snack, M3 = lunch, and M4 = afternoon snack. Lastly, please excuse the photo quality. I packed these bad boys at night when there is no sunlight.


M2 .. Okay, I’m really trying to remember how this one went. Hah! We will say M2 grapes & nuts, M3 asian cucumber salad & sweet potato chips, M4 hummus & peppers [and this was probably a Monday, on which I did spin at 6pm and usually ate a banana beforehand, hence TWO M2s!]


M2 Larabar [the best flavors are Coconut Chocolate Chip, Chocolate Chip, and Chocolate Brownie! OH and the Mint Chocolate Brownie is TO DIE FOR], M3 salad with all the fix-ins like black beans, tomatoes, edamame, spinach, carrots, etc. & grapes, M4 granola bites at my internship and a banana on the way to the gym!

And lastly, snack edition! On Wednesdays, I would get a shrimp burrito bowl [Burrito Bowl Wednesdays!] so I only packed snacks. M2 nuts & pear, M4 guacamole & celery!

Despite not blogging, I’ve documented a lot of my meals and might incorporate some into posts but I do like an official photoshoot with my food to make it pretty for the blog. Strawberry Lemonade Popsicles

Sometimes in life, you just need to word-vom.

1. J got a Pinterest so that I can send him funny pins and so that he can pin things on a board that he wants me to make. It’s a win win.

2. I created a new Instagram account! @skinnymuffin_tiu! It’s my Tone It Up account so the people who follow me and don’t want to hear about all my fitnessy stuff can just look at kitten pictures all.day.long.

3. I went to Boston! It was 14 hours in the car up there and a little over 12 hours back. But totally worth it. Roadtrips are both grueling and amazing because you get to bond with whoever you’re stuck in the car with. Also: read Dane Cook and Barney’s Get Psyched Mix from How I Met Your Mother.

4. That little precious nugget that I adopted? He’s a scoundrel. He RUNS out the door – like, the door to the outside – any time I open it. Uh, talk about panic attack. The other night, J was making dinner and all of a sudden Caribou went UNDERNEATH the counter. Like, underneath the counter and the cabinets and all that madness. J was about to get his tools out, I was cursing and about to put a work order in (WHY IS THIS THING BROKEN SO MY CAT CAN GET IN?!) when Caribou casually waltzed back out. There is currently a mug sitting where that little crevice is to keep the scoundrel out. Talk about life as a cat mom: stressful.

5. I have a new obsession with popsicles. Today I had a ’tilt table test’ to see if my random passing out could be related to my heart (it’s not – woo!) and I was completely bored during the 30min where you stand there and do nothing, in silence. So, I thought about popsicle flavors. Up soon: cake batter, brownie batter, 4th of July, tropical, peach… Requests?

Strawberry Lemonade Popsicles
Adapted slightly from Elephantine

1 c frozen strawberries, slightly thawed
2 packets Stevia
2 tbsp lemon juice
1/2 c plain Greek yogurt

1. Mix the sugar and strawberries, then mix the strawberries in a bowl with yogurt and lemon juice.
2. Pour (scoop) into popsicle molds – mine made 3 popsicles – and freeze overnight.

Sweet Potato Fries with Cilantro Yogurt Dip

My dear friend posted something incredibly inspiring and personal on her blog yesterday.

She, along with many of us, including myself, is addicted to sugar. I mean, hey? Who isn’t? I actually interned at a cooking demonstration yesterday that was hosted at a high fructose corn syrup manufacturing plant. Cool, Winston Salem. Didn’t know we were that bad. Between that and the tobacco, we might as well throw in the towel.

Anyway. Back to the point. She has been a fab friend to me, between inviting me to New York City, experimenting with vegetarianism, and dropping assorted baked goods on my doorstep at various times of the day. I applaud her for being so courageous in sharing a personal tidbit about herself on her blog and I wanted to give her a motivational shout out.

Maybe I’ll consider lowering my sugar intake too? Maybe. Strength in numbers. We’ll start with some healthy sweet potato french fries. Sound good? Baby steps.

Also, sorry for the lack of pictures. My other two were blurry. We’ll just say I was hungry?..

Sweet Potato Fries with Cilantro Yogurt Dip

1 sweet potato
1 tbsp lemon pepper
1 tbsp garlic salt
1-2 tbsp olive oil
1/3 c plain Greek yogurt
3 tbsp cilantro
1 tbsp lime juice

1. Peel sweet potato and chop into thick slices, like fries.
2. Put fries in a bowl and coat with olive oil, pepper, and salt. Toss so that fries are coated equally.
3. Spread fries onto a wire rack, and place rack on top of cookie sheet. Bake for 30 minutes at 400°F.
4. In a food processor or chopper, combine yogurt, cilantro, and lime juice.
5. Dip fries into yogurt sauce.

Tropical Smoothie

Now this, my friends, is a fruit smoothie.

No kale, no chia seeds or oats, nothing hippie about it. Just plain ol’, straight up, fruity.

This is one of those close-your-eyes-and-pretend-you’re-on-a-tropical-island smoothies. A Jimmy Buffett meets breakfast concoction. On my summer bucket list was make a peach raspberry smoothie. Well, this has neither peaches nor raspberries but I’m counting it. It’s equally summery and delicious.

Tropical Smoothie

1 banana
1/3 c chopped pineapple
1/3 c chopped mango
1/3 c plain Greek yogurt
1/4-1/2 c (depending on desired thickness) orange juice

1. Blend all!

Breakfast Banana Split

When I get obsessed with a song, I get obsessed.

Straight No Chaser’s album just came out on Spotify (score!), and I have been listening to this song nonstop.

I first heard this song on 90210 and was like, “Okay, that’s cool. Adrianna’s voice is good.” But this, THIS is good.

So, anyway, tell me about your breakfast routine. Cereal? Oatmeal? Maybe a random pancake or some bacon and eggs? I’m about to shake up your breakfast. Two words: banana. split.

Whole Foods sent me this deliciously inspiring collection of berry recipes, including a breakfast banana split. Uh, genius. I have a feeling there will be many more breakfast banana split recipes to come.

Breakfast Banana Split

1/2 banana, sliced lengthwise
Plain Greek yogurt
Strawberries, chopped
Chocolate chips
Whip cream

1. Combine all in a bowl.
