Today is Memorial Day. Today is about remembering the people who served, being thankful for all they have done for us… and grilling out.

So, I am not a woman of the grill. It intimidates me. But I am a woman who loves portobello burgers. Portobello burgers and grilled vegetables are like every vegetarian’s dream. I think grills intimidate vegetarians. Probably not. I probably only speak for myself, but not making and eating beef burgers means that I don’t really have a reason to become good at the grill.

Grilled portobello burgers are perfect for vegetarians at summer parties. These burgers aren’t grilled but they easily could be. 8th Wonder Spice is a super easy way to add flavor to anything with just a pinch.

Super Easy Portobello Burger

1 portobello mushroom
1 tsp olive oil
1 tsp balsamic vinegar
1/2 tsp 8th Wonder Spice
Mozzarella cheese, tomato slices, and spinach, optional

1. Turn oven to 400°F.
2. Combine olive oil, vinegar, and spice. Brush onto washed portobello.
3. Bake portobello for 5 minutes, then flip over and bake for 3-5 more minutes on 350°F.
4. Assemble burger by adding cheese, spinach, etc.

So, as you have noticed, I have stopped with the Dietetic Dish posts because honestly, I don’t learn enough relatable material every week to give you 5 pieces of information.

BUT I am taking Research Methodology, and even though I will never ever ever be a researcher, I am learning. [WHAT.] Yes. Learning, people. So what am I learning about? Cinnamon.

So, cinnamon is pretty awesome. I mean, I didn’t know the vast benefits of it until.. now. I’ve added it to muffins, pancakes, oatmeal, and smoothies randomly but it wasn’t a staple and just lived a calm life on my kitchen shelf. Wake up, cinnamon. You’re about to be used. Let’s learn about the [potential] benefits of cinnamon (potential because essentially no finding from research is 100% guarantee):

1. Cinnamon may increase insulin sensitivity and lower blood glucose.
2. Cinnamon may reduce inflammation.
3. Cinnamon may promote lipid metabolism in the intestines.
4. Cinnamon may reduce blood pressure.
5. Cinnamon may reduce cholesterol.

Who’s sold? I know I am. I knew that cinnamon could help stabilize blood sugar, but I didn’t know all of these other things! Go add some cinnamon to your food.

Except, not this food. This food would taste weird with cinnamon. Dill? Yes. Cinnamon? No.

I [apparently] have a bad habit of making the same type of thing over and over. For example, Greek things. Greek mac and cheese, Greek pasta salad, Greek salad, Greek vegetable bowl, Greek egg salad… You get the point. But when you buy the ingredients, you have to use them up! It’s kind of like “How to Wear the Same Outfit 7 Different Ways” but with food.

Eggs are great. And egg salad is a delicious way to turn an egg into a meal. Add some spinach and bread and maybe a clementine or two and you have a [future]-RD-approved meal.

Easy Egg Salad

After a long hard day of crafting – yes, crafting – I did not want to make lunch.

So, insert egg salad sandwich. I may be a vegetarian but I get some pretty mad cravings for eggs. Hard-boiled eggs are the greatest. They give me the nutrients I need without having to dive into a steak or chicken breast.

And for all you “No way! Eggs are SO bad for you! Aren’t you trying to be a dietitian? Don’t you know they are full of cholesterol and down right evil?” believers, I have news for you. 1 egg a day (yolk included) has less than the maximum cholesterol recommended intake. So, you can have an egg a day, get your nutrients [iron, vitamin B12, protein, choline, omega-3 fatty acids, and folate], and be a happy camper. Or, in my case, a happy veggie.

Easy Egg Salad

Hard-boiled egg
Sliced olives
Cottage cheese
Spicy mustard
Grape tomatoes
Dill relish

1. Combine all in a bowl and mash together.
2. Spread onto sandwich or serve with crackers or over salad.

Spinach and Artichoke Grilled Cheese

Life is ironic.

I’ve been working at the little yogurt shop for years now. I have a key and everything. VIP, baby. But this summer I have struggled to make the perfect milkshake.

I had it down pat until I returned from school and started working there again this summer, and I have experimented all.summer.long to get the perfect consistency.

Until yesterday. Yesterday, every single milkshake I made was perfect.

And I leave in two weeks. Isn’t that ironic?

This grilled cheese, however, is not ironic. It is just straight up delicious. And a great quick meal after a hard day slinging yogurt.

Spinach and Artichoke Grilled Cheese

1 sandwich thin
1/4 c shredded mozzarella cheese
1/4 c spinach leaves
1/4 c artichoke hearts

1. In a skillet over medium heat, spray Pam and place sandwich thin, separated.
2. Add cheese, spinach and artichokes to one side. Place the other side of the bread onto the filled side.
3. Cook for 5-7 minutes, or until cheese is melted, flipping occasionally.


Now that I am out of school and back at home, my life pretty much consists of the gym, work [aka: reading Harry Potter in the back of a yogurt shop], and cleaning my room. Oh, and some crafts.

I apologize for my lack of recipes lately. I had two more recipes but they had terribly blurry photos and I couldn’t bring myself to blog about them.

So? I’m giving you some lunch inspiration. Lunch can get you down sometimes. It’s easy to just say “Eh, I’ll just have a snack and wait til dinner.” or “Peanut butter & jelly sandwich again? Sure.” or “Ice cream totally counts as a meal, right?” Don’t worry. I am here to inspire you.
