I am officially getting into “elf season.”

What is elf season? The time when you start to think about presents for Christmas. And I don’t mean that I’m making Christmas cookies or listening to Christmas music yet, but I am a “planner.” I like to have things done before the last minute. Hence, elf season has begun.

Tortilla
Cheddar cheese
Apple slices

Assemble. Heat on stove. Eat quesadilla.

Fruit and Cream Cheese Breakfast Quesadilla

Look at that glorious sun shining in. Gotta say there’s nothing like eating breakfast in the sunlight.

And this breakfast is quite yummy. Now, it’s not quite as filling as oatmeal or pancakes, but it is just sweet enough to fix any sweet tooth.

When it comes to breakfast, you have to think outside the box. Or the bowl. I mean, oatmeal or cereal everyday? For [most] people, that’s a snore [for me, that’s amazing]. But I thought I would shake it up.

Whole wheat tortilla
Strawberries
Bananas
Cream cheese
Cinnamon

1. Assemble.
2. Nom.

Vegetable Pizzadilla

I am getting excited for holiday THINGS but not the holidays. Not yet.

Like, pumpkin everything and, better yet, PEPPERMINT everything.

Check out these super sweet Pringles. And I just bought this soap yesterday. And I’m about to take my second shower of the day because of it. Double win.

And on a non-peppermint note, this needs to be in my belly now. And this already is in my belly.

But here’s a totally non peppermint or even sweet thing. But it is ‘sweet’ in the awesome sense. Hello, pizzadilla.

This isn’t a technical recipe. This is just from Pinterest, but specifically from The Key Ingredient.

— tortilla + pizza (or pasta) sauce + black olives + bell peppers + spinach + tomatoes + mozzarella cheese

— stick it on a greased skillet over medium heat, let it toast for a few minutes, flip, and continue until slightly crispy on each side

Pumpkin Spinach Quesadilla

You know what’s awesome about birthdays? Cake and presents. And the excuse to dress up and wear glitter and no one can judge you.

I’ve already received some fancy cocoa that is begging me to drink while I curl up under a blanket and read and a super cool cutting board that is personalized. Hello, how cool is that? So now Skinny Muffin will be represented on at least some of my photos.

Let’s talk about other October things. Like this fall bucket list. Seriously, so excited. There are some things – like wear Uggs – that will be changed [to ‘wear boots’]. Also? Haunted house? No way, man.

You know what is happening, though? This super easy pumpkin spinach quesadilla. You know when you buy a can of pumpkin and you’re trying to figure out how to use it for DAYS? Yes. This is one of those recipes. And it is great for days when you’re doing lots of studying and don’t have time to fix a crazy fancy meal.

Pumpkin Spinach Quesadilla

1 tortilla
1/4 c canned pumpkin
1/4 c spinach
1/4 c shredded Mexican cheese

1. Spray saute pan, place over medium heat, and place tortilla on top.
2. Add spinach, pumpkin, and cheese onto tortilla.
3. Flip empty side of tortilla over, so that the quesadilla is closed, then flip every few minutes, until the cheese is melty and the tortilla is slightly crispy.

Sun-Dried Tomato, Avocado + Pepperjack Cheese Quesadilla

1. I’m hopelessly addicted to Sky Burger.

2. My L5 is out of alignment. Again.

3. My room is a total disaster, probably because I play too much Sky Burger to stop and actually clean it.

4. I’m still working on Harry Potter, but it’s a slow process. Almost 3 down!

5. I’ve been sick for two freaking weeks. And my voice has sounded like a man for 6 straight days, now, and I’m beginning to think I’m going to sound like this forever.

6. All I want to do is craft but I can’t find the motivation or energy to do it. Lazy girl problems.

7. I have the best friends in the entire world and now have a plethora of homemade graduation gifts, letters, and framed photos.

8. I haven’t worked out in way too long and all of my hard work is going down the drain. Marble cake with cookies & cream buttercream frosting for graduation doesn’t help either. Send help.

9. I just downloaded this new app called “A Beautiful Mess” and I’m completely obsessed.

10. And, finally, I’m a pasty white girl, so I’m going to head outside now to get a tan and keep on keeping on with Harry Potter.

Sun-Dried Tomato, Avocado + Pepperjack Cheese Quesadilla

Adapted slightly from Bake Your Day

1 tortilla
2 slices pepperjack cheese
1/2 avocado
1/4 c sun-dried tomatoes
1/4 c baby kale
Pico de gallo

1. Use Pam or butter on pan, if desired. Place tortilla on saute pan over medium heat.

2. Lay cheese on one side of the tortilla.

3. Mash avocado into the cheese side of the tortilla, then add kale and sun-dried tomatoes.

4. Flip other half of tortilla onto the cheese side and cook, flipping occasionally, until cheese is melted and tortilla is slightly toasted.

5. Top with pico de gallo.
