So I am getting back on the workout wagon.

And let me just tell you. My calves are dead. Painfully dead. Tight, angry, dead. All of those things you see on Pinterest or Facebook joking about the ‘day after leg day,’ with the dude walking around on his hands… it’s real.

I did weighted squats for the first time in years and it has proven to be all its cracked up to be. And today is only Day 1. Apparently Day 2 is the worst. All this pain calls for some comfort food.

The boyfriend and I are doing a 30-day no alcohol, no sweets thing. And blueberry muffins are as close to a sweet as I can get. These fresh blueberries were succulent and delicious and the perfect treat while watching Orange is the New Black. It’s not my FAVORITE show but it has a weird addicting component to it, and being only 13 episodes, I decided to watch it before spring semester starts and my life is over. And that little romance going on? (I won’t spoil it if you haven’t watched it.) Can’t. Too cute.

Chocolate Covered Katie is pretty much a genius with her “single lady” muffin and cupcake series. I have used several of her recipes and just love them. I usually have exactly what I need in the kitchen for them, so when it’s 4pm and raining and 7°F outside, I can make a muffin without having to run to the grocery store.

Blueberry Muffin for One
Adapted slightly from Chocolate Covered Katie

3 tbsp white whole wheat flour
1/4 tsp baking powder
Pinch salt
2 tbs blueberries
1/2 tsp vanilla extract
1 tbsp canola oil
1 tbsp + 1 tsp soymilk
Pinch of cinnamon

1. Combine all.
2. Bake at 330°F for 15-17 minutes.

    This is awesome. It’s so hard to to bake when it’s just me in the house so I love this scaled down recipe! Also, I feel you on that workout thing. I went running yesterday and my legs want to murder me today.

    Lol oh girllll. I HATE getting back into the work out routine after not working out. Getting back into shape is the worst. But good for you!!!! Haha. Let us all know how your 30-day cleanse-ish thing goes! Sounds fun. No, sounds healthy. Not fun. Truth time: would you eat this muffin if you weren’t on your sugar-free diet? It looks totally delicious but with no sugar?? Does it taste a little weird?

      Actually circumstances have arisen and I was granted permission to stop the no-sweets thing. January was been hard, to say the least, for other reasons, so the boyfriend and I decided to call it off. However, because it was one muffin, I didn’t think it was lacking in flavor or sweetness anyway! Blueberries are a great natural sweetener and I think it was delicious without sugar. I have, though, trained my body to eat a lot of things without added sugar (tea, muffins, yogurt, etc).
