Rice, Bean and Kale Burrito

If I had any common sense, I would NOT post this because, well… this picture is ugly. AND this is the best picture out of all the ones I took. Let me explain… In a nutshell, I’ve been really sick and it’s been raining and there’s been no natural daylight BUT this turned out way better than I was expecting and I want to share it with you. Because it is ridiculously easy and delicious and fabulously vegan.

Luckily one of my New Year’s resolutions wasn’t to post more recipes or to post better looking photos, but it is still a life-long goal of mine. Bear with me? The next posts will be delicious AND attractive, deal?

Rice, Bean & Kale Burrito
Inspired by Garden of Vegan

1 tsp olive oil
1/2 c cooked brown rice
1/4 c garbanzo beans, drained and rinsed
Leaves torn off of 2 kale stalks
2 tbsp soy sauce
1/4 tsp each of ginger, dried basil, and dried parsley
1 large tortilla

1. Over medium heat, sauté the rice, beans, spices, and 1 tbsp of soy sauce in the olive oil.
2. Once the mixture is slightly toasted and warmed through (3-5 minutes), add the kale leaves and remaining tbsp of soy sauce.
3. Stir until kale is slightly wilted.
4. Put mixture in tortilla, roll, and eat.
