Spinach and Lentil Stuffed Pasta Shells

I am all about the stuffed shells lately.

The first time I made them I hated them because I thought they were a super pain in my booty because they clumped together and were massive to eat.

Now – love them. They are actually a fast and easy super that is extreeeemely versatile. These bad boys are made with love, cottage cheese, and lentils. Everything you need to survive.

Spinach and Lentil Stuffed Pasta Shells

pasta shells / cottage cheese / dried basil + oregano / spinach / lentils / marinara sauce / cheese

1. Cook pasta shells.
2. Combine cottage cheese, spinach, dried basil and oregano, and cooked lentils in a bowl and stuff mixture into the shells.
3. Place pasta shells in an oven-safe glass or bowl, cover with sauce and cheese, and bake at 350°F for 20-30 minutes or until warmed through.
