I’m not exactly sure how I survived without caffeine over the last 8 years of my life.
Between high school and college, I have done some serious studying. Late nights, cram sessions, study guide and flashcard making, and running on anywhere from 5-8 hours of sleep. Which, for most people probably sounds great, but I need a solid 8 hours every night to function.
My current poison of choice is Celestial Seasoning’s Harvest Pumpkin tea. For reals, though. This black tea will kick you in the head in a good way. And if you’re having a really rough morning, go for two bags in one cup. Talk about bouncing off the walls.
Anyway. Let’s talk about food. Specifically, let’s talk about how it’s WORLD VEGETARIAN DAY. And there is no better way to celebrate today than with burgers – veggie style. These burgers are outrageously delightful because they have CHEESE in the middle. Yes, please. Ooey, gooey, cheesy goodness.
Cheese Centered Bean Burgers
1/2 can each of black beans and red beans, drained and rinsed
2 pinches garlic pepper
2 tsp hot sauce
2 tsp balsamic vinegar
1/3 c shredded Mexican cheese
1/3 c breadcrumbs
1. Mash beans until slightly softened, then add remaining ingredients except for cheese. Stir in ingredients until well combined.
2. Form cheese balls by rolling cheese in your hands (makes about 2 cheese balls), then form two patties around cheese.
3. Cook patties over medium heat on sprayed skillet until slightly browned and crispy on the outside, flipping occasionally.
