My mom was having a bad day. And all she wanted was mint chocolate frozen yogurt from the place where I work.
We didn’t have any at Zack’s, so I bought some Ben & Jerry’s Chocolate Peppermint Crunch ice cream. And man was it good. Between the two of us, we finished a half pint in about 15 minutes.
Luckily, moments of [ice cream] weakness can be offset by healthy salads. Right?..
This tofu is delicious and covered in parmesany goodness. Crunchy and warm, perfect over a salad. Meat eaters? You’ve met your match. Tofu is taking on a whole new level.
1/2 package extra firm tofu, drained and pressed
1/4 c grated parmesan cheese
1/4 c bread crumbs
2+ tbsp olive oil
1. Preheat oven to 400°F.
2. Mix parmesan and bread crumbs.
3. Brush olive oil onto tofu and roll into parmesan mixture.
4. Bake for 30 minutes, flipping halfway through.
