As I begin to consider what to pack for Italy (in T – 5 days), I have absolutely zero motivation to do anything else.
Study? Nope. Work? Nope. Go to all these freaking doctors appointments (yes the body is still hating me)? Nope.
However, I do want to watch Desperate Housewives, which is my current show of the month. I seriously need to smack this show addiction and turn it into something more productive. Like reading or cooking (which I have slacked off with) or playing the piano. I guess there’s hope for this summer.
Speaking of summer. This dish screams summer. Despite the fact that I made this pre-illness, it is perfect for weather like the past few days we have had. Beautiful, sunny, and perfect weather calls for light, fresh, flavorful quinoa.
1 c quinoa
1/4 c fresh cilantro, chopped
3 tbsp lime juice
1 tbsp olive oil
1/2 tsp cumin
1. Cook quinoa according to directions.
2. Combine remaining ingredients.
