I spent days trying to figure out what to make for Easter dessert. It changed from mint mousse cake to brownie-bottomed raspberry orange cheesecake to me wanting something less intense that I could make quickly after work to…

Me having the flu + stomach bug. Which means… there is neither any baking going on today nor any eating. Yep, can’t eat. The only thing I have kept down is dry cereal. Happy Easter!

Just kidding. Easter is still great. Oh, but no, not kidding about the sick part. That is true. However, I made these last week and though I could share them with you. These almond joy pancakes are banging. Fo realz.

PS: I apologize for the blurriness. For whatever reason, half of my pictures turned out blurry. Uhh.. personal problems much? We will blame it on the hunger. And the sugar coma.

Almond Joy Pancakes

1/4 c whole wheat flour
1 tbsp old-fashioned oats
1 tbsp sugar
1/2 tsp baking powder
1 tsp cocoa powder
1/4 tsp baking soda
1 tbsp + 2 tsp vegetable oil
1/4 c + 2 tbsp soymilk
Dash of vanilla extract
1 tsp maple syrup
2-3 tbsp chocolate chips
2 tbsp coconut flakes
2 tbsp almonds

1. Add dry ingredients.
2. Add wet ingredients.
3. Make pancakes.
4. Top with additional chocolate, coconut and almonds.
