Tofu Salad

Wait, don’t leave.

Don’t let the title of this recipe deter you. It actually tastes like egg salad. And the celery adds the perfect amount of crunch and the pepper flakes add a little kick and the dill makes it nice and fresh.

So, enough with the food talk. Want to hear about my life? Remember my back problems? The ones I’ve had for months and months and have kept me from, oh, just about everything? [Read: putting on pants like a normal person, cycling, bending over, sneezing, any form of exercise besides walking….] Well now I am seeing a chiropractor.

And people. Let me just tell you. Lots of people think they are a quack but this guy is the real deal. I walked in on Day 2 and he said, “I know exactly what the problem is.” BAM. Now, when has any doctor ever said that to you? I love directness. We are on Day 2 and things are feeling better. Hopefully in a couple weeks I can put pants on like a normal person. And sneeze pain-free. Score.

Tofu Salad 
Adapted from Vegetarian Cooking for Dummies

1/2 package tofu
1/4 c plain Greek yogurt
1 tsp dijon mustard
1/4 tsp garlic powder
1/4 tsp black pepper
1/4 tsp red pepper flakes
1/4 tsp dill
1/4 c chopped celery
1/4 c chopped peppers
1/4 c chopped green onions

1. Drain and press tofu.
2. In a bowl, mash tofu with a fork. Add remaining ingredients.
3. Chill before serving.
