Throwing something together and it actually tasting good.
Insert: random ingredients from my kitchen. Orzo. Balsamic vinegar. Gorgonzola cheese. Vegetables. The orzo and vegetables are light and fresh, like the warmer temperatures during the day, but the gorgonzola cheese is sharp with a kick, perfect for keeping you warm during the cooler temperatures at night.
But really? Can’t it just be in the 60’s and 70’s for a while?
Balsamic Orzo with Gorgonzola and Vegetables
1/2 c orzo
1/2 c chopped vegetables of your choice (I chose peppers and peas)
Pinch of Italian seasoning
2-3 tbsp gorgonzola
2 tsp + 1 tsp olive oil
1 tbsp balsamic vinegar
1. Cook orzo according to directions.
2. Saute vegetables with 1 tsp olive oil and seasoning.
3. Toss vegetables with 2 tbsp olive oil, balsamic vinegar, gorgonzola and orzo.
