Pear and Gorgonzola Pizza with Mint Pesto

Wouldn’t it be cool to be a famous singer? A rockstar?

I went to see Bon Jovi the other night and was thinking about how great it would be to sing and dance your heart out. I dance but it’s in the car or in front of the mirror in my bedroom. And I sing. Usually loudly, when no one’s around.

But to sing and dance well? That would be fun. And have an audience? Fans??

Anyway. You know what else is fun? This pizza. Fun for your mouth. Delicious, salty, sweet, wonderfulness in individual-sized form. Also a great precursor to spring. WHERE ARE YOU, SPRING??

Pear and Gorgonzola Pizza with Mint Pesto

1 package fresh mint leaves
1/4 c walnuts
2 tbsp olive oil (plus more if necessary)
2 tbsp lemon juice (plus more if necessary)
2 tbsp grated parmesan cheese
1/2 pear, thinly sliced
2-3 tbsp gorgonzola cheese
1 small (individual sized) pizza crust

1. Blend mint, walnuts, olive oil, and lemon juice in a food processor until well mixed and slightly thick.
2. Spoon pesto on pizza crust towards edges.
3. Place pear and gorgonzola cheese on pizza and bake according to directions.

    Hoo my god! Want! I LOOOOVE pear and gorgonzola pizzas. Always top of my list at fancier Italian restaurants/pizzerias. I really need to just make them at home until I get sick of them, to cut down on my expensive penchant.
