Raspberry Orange Chocolate Mousse

Hey there.

It’s Valentine’s Day. Yes, that mushy gushy holiday where hearts and pink and red and roses and chocolates taken over the world. Yes, the world. But I am here today only with the red and the chocolate. The important thing is the chocolate. Obviously.
While I am blessed this year to have a boyfriend, I have spent many Valentine’s Days without boyfriends. In high school, we even had an Anti-Valentine’s Day party and we wore all black and watched The Descent.

Anyway, this mousse is not just for lovebirds. This is for anyone. For you and your best friend. For you and your roommates. For you and your coworkers. Or, just, for you (and some wine). Whatever floats your boat. You could even add blackberries on top and use it as a dessert at an Anti-Valentine’s Day party.

Raspberry Orange Chocolate Mousse

1 package silken tofu
1/2 c raspberries
1 dark chocolate orange
1 tbsp plain soymilk
1 tsp vanilla extract
1 tsp cocoa powder

Blend all in a blender or food processor. Eat immediately or refrigerate for a thicker mousse.
