This turned out really well and deliciously.
It reminded me of a goat cheese medallion because it was slightly crunchy on the outside and then warm and soft on the inside. Perfection.
This is just a continuation of the “bring on the spring weather” mindset I have going on. Bright colors. Light salads. Fresh vegetables. Yesyesyes.

Cottage Cheese Quinoa Burgers
Adapted from Eating Well Living Thin
3/4 c cooked quinoa
1/4 c cottage cheese
2 tbsp carrot, finely chopped
1 flax egg (1 tbsp flax meal + 3 tbsp warm water)
2 tbsp whole wheat flour
1 green onion, chopped
Pinch of ground cumin
Pinch of garlic pepper
Pinch of chili powder
1 tbsp fresh basil, finely chopped
Pam or olive oil
1. Combine all ingredients in a bowl.
2. Make patties with hands (about 2).
3. Cook over medium heat in saucepan with olive oil or Pam. Flip until brown and slightly hardened and crispy on each side.
