Cottage Cheese Quinoa Cakes

This turned out really well and deliciously.

It reminded me of a goat cheese medallion because it was slightly crunchy on the outside and then warm and soft on the inside. Perfection.

This is just a continuation of the “bring on the spring weather” mindset I have going on. Bright colors. Light salads. Fresh vegetables. Yesyesyes.

Cottage Cheese Quinoa Burgers
Adapted from Eating Well Living Thin

3/4 c cooked quinoa
1/4 c cottage cheese
2 tbsp carrot, finely chopped
1 flax egg (1 tbsp flax meal + 3 tbsp warm water)
2 tbsp whole wheat flour
1 green onion, chopped
Pinch of ground cumin
Pinch of garlic pepper
Pinch of chili powder
1 tbsp fresh basil, finely chopped
Pam or olive oil

1. Combine all ingredients in a bowl.
2. Make patties with hands (about 2).
3. Cook over medium heat in saucepan with olive oil or Pam. Flip until brown and slightly hardened and crispy on each side.

    Omg yum!!! These sound so good. I LOVE fried goat cheese/any kind of fried cheese! I went through a total cottage cheese-hating phase but I feel like I should get back into it. It's healthy right??
