We all know I want summer.
So I’m busting out the cilantro and strawberries. Well, the strawberries aren’t part of the recipe. They’re just a delicious, pretty, colorful perk.
I had a friend date Saturday and we ate this. DELISH. Oh, and we had a special Valentine’s treat that will be on the blog soon.
2. Boil sweet potato in a pot with water until softened.
3. Saute onion, garlic, bell peppers and peas over medium heat in saute pan with olive oil.
4. Combine vegetables with quinoa, sweet potato, and remaining ingredients in a bowl.
