This whole back situation has left me in a funk. And not wanting to do anything but watch Private Practice in bed and nibble on peanut butter and crackers.
Nothing about that sentence screams “Let’s make food!”, hence my lack of posts recently.
Despite having no motivation to do anything (except the one thing I can’t do: exercise), I think I have turned the tables into mental recovery. I made some oatmeal this morning. Nope, not overnight oats, real oatmeal. And now I want to make everything.
So as I enjoy this oatmeal, I’m just going to watch oneeee last episode of Private Practice..
Cinnamon Apple Peanut Butter Oatmeal
1/2 c old-fashioned oats
3/4-1 c unsweetened almond milk
1/4 c applesauce
1 1/2 tbsp peanut butter
1/4 tsp cinnamon
1. Combine oats and milk in a microwave-safe bowl and microwave for 2 1/2 – 3 minutes on high.
2. Stir the oats, then add applesauce, peanut butter, and cinnamon.
