So I have this problem. With my back.
It hurts all.the.time. And I’m going to the doctor later today but all I want is a Vicodin and a margarita to help with the mental and physical pain. And potentially ward off a likely inevitable mental breakdown at the doctor’s office.
The one upside to having an injured back is when you go into Target looking for one thing, you come out with that one thing. Despite walking through the women’s clothes section [WHICH HAS SWIMSUITS, by the way. WHAT??! Get out.] looking for a shirt for work (and failing miserably), I was unable to try anything on because, well, I can’t bend over. Or down. Putting on jeans, or clothes in general, is a serious feat, my friends.
So, I walked out with fish oil supplements and fish oil supplements only, even though there were several dresses and flowy shirts and colored jeans SCREAMING my name. Thanks, injury, for saving me a little money. Glad you’re good for something.
On a food related note, this grilled cheese is fabu. My best friend says fabu and it just makes me laugh and think about when times were easy and life was just about making it to the weekend to have a sleepover with your galpals. This grilled cheese is low calorie, super simple and fast, and bursting with flavor.
Green Apple and Chipotle Grilled Cheese
1 whole wheat Sandwich Thin
1 wedge Queso Fresco and Chipotle Laughing Cow cheese
1/2 green apple, thinly sliced
3/4 spinach leaves
1. Spread cheese on bread.
2. Top bread with apple slices and spinach.
3. Toast on sprayed pan over medium to medium high heat until cheese is melty.
