Citrus Chickpea Stew

This soup screams summer.

It’s hearty and warm enough for winter but it’s fresh and tangy enough to be reminiscent of the summer months.

There is something fabulous about lemon zest in soup, and this might become a frequent thing. Can we all go on a mini vacation in our minds and just eat this soup together? Please and thank you.

Citrus Chickpea Stew
Adapted slightly from Simple Bites

1 c brown rice
1 can chickpeas, drained and rinsed
1 c apple juice
1 tbsp butter
1 onion, diced
2 garlic cloves, minced
Zest of 1 lemon
Juice of 1/2 lemon
1 tsp cumin
1/4 tsp cayenne pepper
Pinch of black pepper
Optional: 2 wedges Light Queso Fresco and Chipotle Laughing Cow cheese

1. Combine all ingredients except rice in a large pot over medium high heat. Cook until boiling then simmer for 30 minutes.
2. Cook rice according to directions.
3. Optional: stir in cheese.
4. Serve over rice.
