Spinach Lasagna Roll Ups

It’s that time of year again.

The time when people make resolutions for the new year. They have hopes and dreams of changing, of becoming better, fitter, happier. What’s your resolution?
I bet somewhere, deep down inside, even if you say that your resolution is to study more or go to bed earlier or learn a new hobby, that you would like to eat a little healthier.
You’re welcome. I’m here to make that easier. I’m going to share fabulous, delicious recipes with you. I would also like to keep myself liable and tell you that one of my many [ahem, 10] resolutions is to make 5 things on my recipe bucket list. Any requests?
This is one of the things on my bucket list. I thought I would start this year out right and get started on one of my resolutions.
My mom makes a spinach lasagna roll up very similar (if not identical) to this. Rolled up spinach is ideal because it’s little individual lasagnas for you. I mean, how perfect is that?

Spinach Lasagna Roll Ups
Adapted slightly from Just Add A Slice Of Love
2 garlic cloves, minced
1 package frozen spinach, slightly thawed
1/2 tbsp butter
1/4 tsp dried basil
1/4 tsp dried parsley
1/8 tsp black pepper
6 lasagna noodles
7.5 oz ricotta cheese (half of a 15 oz container)
1/2 c pasta sauce
1/4-1/3 c shredded mozzarella
3 tbsp Italian breadcrumbs

1. Cook noodles according to directions.
2. Melt butter on medium heat and saute garlic for a couple minutes. Add spinach and combine until incorporated.
3. Add spices and pepper.
4. Drain noodles,
5. Spoon filling onto noodles and roll up.
6. Place rolled noodles into a baking pan and spread pasta sauce on top. Sprinkles cheese and breadcrumbs and bake at 350°F for 20-30 min, or until warmed all the way through.
7. Serve hot.
