In less than one week, I will be squeezing into a nice, little, glittery black dress to watch the ball drop and drink champagne with my best friend.

Sun-dried Tomato Chickpea Pesto Sandwiches
Adapted slightly from Running to the Kitchen
1 15oz can chickpeas, drained and rinsed, then mashed with a fork
2 tbsp sun-dried tomatoes
2 tbsp cilantro, chopped
1 clove garlic
1/2 c spinach
1/4 c plain Greek yogurt
1 tbsp tahini
3 tbsp lemon juice
1/4 tsp red pepper flakes
1/4 tsp dried oregano
1/4 tsp dried basil
Whole wheat Sandwich Thins (or any bread)
1. Combine all ingredients except bread in a blender.
2. Spread onto sandwiches.
