Sun-dried Tomato Chickpea Pesto Sandwiches

We have less than a week, people.

In less than one week, I will be squeezing into a nice, little, glittery black dress to watch the ball drop and drink champagne with my best friend.

THAT means you will be seeing no dessert recipes and all healthy recipes. Don’t like that? Well.. sorry. This blog is called Skinny Muffin and we are trying to put life back into that first part.

Sun-dried Tomato Chickpea Pesto Sandwiches
Adapted slightly from Running to the Kitchen

1 15oz can chickpeas, drained and rinsed, then mashed with a fork
2 tbsp sun-dried tomatoes
2 tbsp cilantro, chopped
1 clove garlic
1/2 c spinach
1/4 c plain Greek yogurt
1 tbsp tahini
3 tbsp lemon juice
1/4 tsp red pepper flakes
1/4 tsp dried oregano
1/4 tsp dried basil
Whole wheat Sandwich Thins (or any bread)

1. Combine all ingredients except bread in a blender.
2. Spread onto sandwiches.

    Omg that looks like an AMAZING sandwich. I want to make that right now, except I don't have cilantro or tahini. It's basically a hummus sandwich, huh? Do you think it would be not as good without those two ingredients? So excited for lunch this week!!

    Yeah! Honestly, I'm not the hugest fan of tahini so I'm sure leaving it out would be fine. And you could just use more spinach and then some dried basil for flavor instead of cilantro. The fun thing about cooking is that the options are endless!
