Protein-Packed Chocolate Pancakes

So I’m dating this guy that I sometimes refer to as The Hulk.

He likes to do crazy things like Bootcamp (aka CrossFit, aka death) and pound protein shakes. I just smile and nod.

One day, while scrounging through his fridge and pantry (read: peanut butter, bread, salsa, and expired spices – TOTAL man kitchen), I found his protein stash and asked if I could use some to bake sometime. I’ve always wanted to. It’s so… trendy. So, he got this little handy dandy single-serving package for me.

And let me just tell you. These bad boys are fluffy. These are some seriously fluffy pancakes. I whipped up this little recipe sans inspiration, just totally going off the notion of “What contains lots of protein?” and throwing it in a bowl. And, luckily, it formed these delectables.

While I wasn’t exactly deserving of these pancakes (ahem, meaning that I haven’t seen the inside of the gym in about 3 weeks), I will be remaking these once I am deserving, especially if he convinces me to join him in his crazy Bootcamp shenanigans. We shall see..

Protein-Packed Chocolate Pancakes

1 packet
1/2 tsp baking powder
1 tbsp whole wheat flour
1/8 c plain Greek yogurt
1/4 c plain almond milk
1 egg white
Blueberries (optional)

1. Combine all in a bowl.
2. In a sprayed skillet, spoon pancake-sized portion of batter and cook on medium heat. Flip when bubbles form or when cooked on underneath. Add blueberries into batter if desired.

    Ohhh man these look SO GOOD! I tried to make protein pancakes the other month and failed miserably. They ended up way too runny and weirdly floppy! But I would love to try these–how much protein powder do you think you used from the packet? Either in grams or tablespoons?

    Thanks! NYE was crazy, but it's time to get back on track with some healthy meals! Haha. Now I will be deserving of these pancakes since I'm hitting the gym again.

    It was an individual serving package, and the package called for one scoop. That probably doesn't help, but maybe 2-4 tbsp? I just dumped the whole package in there. I hope if you try again they work out! The cool thing about pancakes is you just keep adding flour or liquid until you get the right consistency. Love me some pancakes!
