Today is the Saturday before Christmas.
Like. The second craziest day of the year besides Black Friday. And guess where I’ll be? Bath & Body Works.
I have a new tactic for selling products: find the men who look the most lost and ask them if they need help, suggestions, or just want me to pick something out for them to give their girlfriend or wife. They usually prefer the latter.
Besides selling lots of Eucalyptus Tea Aromatherapy lotion, body wash, and sugar scrubs, I am trying to keep some balance in my diet. If you’ve kept up with my blog lately, you have probably noticed a trend. And there is nothing skinny about the last few Skinny Muffin recipes.
So, here is one last healthy recipe before I bombard you with more sugar-laden delicacies. Post-Christmas, I promise to resort back to my healthy recipe posting, but for now? Just enjoy the sugar. It’s one of the few times per year that you get to do it, totally guilt free.
Spicy Avocado Mac and Cheese
Adapted from Eats Well With Others
1 1/2 c pasta
1 clove garlic, roughly chopped
1 avocado, peeled and pitted
2 tbsp lime juice
1/4 c chopped cilantro
1 tbsp butter
1 tbsp whole wheat flour
1/2 c plain almond milk
1 c lowfat shredded cheddar cheese
1/4 tsp red pepper flakes
1/2 c chopped spinach
1. Cook pasta according to directions.
2. Blend garlic, avocado, lime juice, cilantro and red pepper flakes in a food processor.
3. In a small saucepan over medium heat, melt butter, then stir in flour. Add milk and stir until slightly thickened.
4. Combine pasta, avocado sauce, milk sauce, spinach and cheddar cheese. Stir until well combined.
