End of the World Peppermint Mousse

So, today is the last day. Of the world. Like, tomorrow? We might not be here.

I suggest you make this and find your favorite person and go hang out with them. All day long. Do something crazy like run around while you still have legs or eat a whole cheesecake or stay in your underwear all day or take a roadtrip somewhere.

Just. Do it with someone awesome. No one wants to spend their last day on Earth miserable and alone watching reruns of Sex and the City and drinking bad wine. Stock up on good wine and good company. We may be in for a long night. Or.. a short one. I guess we’ll find out.

While the world is crumbling to our feet (I shall be at Bath & Body Works, so at least I’ll smell good on my way out), I thought we could all munch on some peppermint mousse. Just in case this “end of the world” includes some kind of invasion, we could offer this delectable to the other kind in means of peace, of surrender, of anything that results in survival.

Peppermint Mousse
Adapted from this recipe

1 package silken tofu
1 tsp cocoa powder
1 1/4 c chocolate chips
1/2 tsp peppermint extract
1/2 tsp Peppermint Kahlua
Crushed peppermints

1. Melt chocolate over medium heat in a small pan, stirring constantly.
2. Combine all ingredients in a blender.
3. Top with extra chocolate chips and peppermints.
