3 Ingredient Pancakes

It’s happening. The Christmas spirit has officially overtaken me.

I’m listening to Christmas music and making Christmas cards and wearing Christmas socks and finishing up my Christmas present buying. I’m singing Christmas songs at the top of my lungs. Only when my roommates aren’t around, obviously. I mean. I don’t want them to kick me out. Let’s just say I won’t be trying out for American Idol anytime soon..

So, have you heard about this whole “3 ingredient pancake” trend that’s happening right now? I’ve seen it on Pinterest and a blog or two along the way and have wanted to try it. Due to fruit flies – eeewww – we haven’t been able to keep bananas on the kitchen counter BUT when I had lunch with my professor, I stuck a banana in my purse, forgot about it, then pulled it out in a perfectly ripened state.

Hence. 3 ingredient pancakes. Except, the whole ‘egg and banana’ combination didn’t work for me, so I added flour. Technically, still 3 ingredients (+ pomegranate seeds).

3 Ingredient Pancakes

1 ripe banana, mashed
2 eggs
3/8 c self-rising flour (give or take, depending on consistency)
Optional: pomegranate seeds

1. Combine banana and eggs, then add in flour slowly until reached desired consistency. Add more or less if necessary.
2. Spoon some of batter onto skillet over medium heat on stove. Drop pomegranate seeds on top. When bubbles form, flip. Repeat with additional batter.
