Chocolate Banana Bread Oatmeal Bake

Sometimes a girl needs a real, baked breakfast in the morning.

Not something that comes out of a box. Not something that has been sitting in the refrigerator all night. Something fresh, warm, and hearty. Especially on this rainy day. And the fact that it’s my last reading day (following my last day of undergraduate classes and prior to my last undergraduate exam) also calls for warm, hearty things.

And, of course, peanut butter and chocolate. Nothing quite like a Reese’s baked into oatmeal. No, not literally baked in. We are trying to have a little bit of self control before all of the Christmas baking begins.

So here I present to you some chocolate banana bread baked oatmeal. I recommend eating it in bed while watching Grey’s Anatomy as the rain pours down outside. It’s the perfect denial of the fact that you have 500 million things to do today and not enough hours to do them.

Chocolate Banana Bread Oatmeal Bake
Adapted from Running to the Kitchen

1/4 c old-fashioned oats
1/4 c whole wheat flour
1/4 tsp baking powder
1 tbsp cocoa powder

1/4 tsp cinnamon
1/4 tsp ground flaxseed
1/4 tsp wheat germ
1/4 tsp chia seeds

1/2 small banana, mashed
1/2 tsp vanilla extract
1 egg white
1 1/2 tbsp original soymilk
1/2 tbsp molasses

1. Preheat oven to 350°F and grease an oven safe ramekin.
2. Combine dry ingredients in a small bowl.
3. Combine wet ingredients in a different small bowl. Add wet to dry. Mix.
4. Bake for 15-20 minutes, or until fully cooked.
