Last night my roommate and I bonded over this video.
Seriously, that is intense. We curled up on the couch next to each other and couldn’t tear ourselves away. My question is, how are people laughing?? The background to this video is people laughing! I WOULD NOT BE LAUGHING. My roommate and I decided that we would be the two women who curl up in the fetal position and cry until she goes away.
My roommate also decided she would punch the girl. So maybe I would just be in the fetal position while my roommate performs a punch-off with this creepy child.
On a less scary note, this salad is deeeelish. Anything with butternut squash is basically the greatest thing ever, but the spices in this really dress it up.
So go. Go be healthy. The calm before the storm. The healthy before the non-stop peppermint chocolate everything.
Sweet & Spicy Butternut Squash Salad
Adapted slightly from Pinch of Yum
1/2 c quinoa
1/2 tbsp curry powder
1 tsp brown sugar
1 c peeled, cubed butternut squash
1 tsp canola oil
1/4 tsp cinnamon
1/2 tsp cumin
1 c spinach
1/4 c dried cranberries
1/4 c chopped walnuts
1. Combine butternut squash with canola oil, cinnamon and cumin. Roast butternut squash at 400°F for 20 minutes, stirring occasionally.
2. Meanwhile, cook quinoa according to directions. When cooked, stir in brown sugar and part of curry powder.
3. Combine cooked quinoa, butternut squash, remaining curry powder, cranberries, and walnuts.
