Vegetable Pizza Bagels

Happy Friday.

I’m in the process of accepting the fact that it is November. Slowly but surely. Keep the Christmas music at bay but bring on the apple pie candles.

You know what’s awesome about Fridays? Besides everything, the fact that it is totally acceptable to eat pizza. As a twenty-something year old girl (woman??), I need to understand that my metabolism will slow down and pizza is not okay for breakfast, lunch and dinner every day.

I know, I know. All of you who are dreaming of college and living off of pizza for all of your meals, I have to break it to you.. You can’t do that. So I found a solution. A cheap, reasonably healthy (especially if these were whole-wheat! But they aren’t because they are leftover research bagels), single-serving solution for you.

Pizza. Bagels.

And no, not Bagel Bites. But DANG those are good. Right? I remember my mom bought a new kind one time that had some kind of herbs on it, and I was eh.. say, seven or eight years old and I said, “MOM! There are LEAVES on these bagel bites!” She tried to explain that they were spices. I’m pretty sure I refused to eat them.

Which is ironic. Because now my diet is 84% leaves.

Vegetable Pizza Bagels

1 bagel
1/4 c tomato sauce
1/4 c sliced baby tomatoes
2 tbsp fresh basil, chopped
1/8 c shredded cheese

1. Split bagel. Top bagel halves with sauce, tomatoes, basil and cheese.
2. Bake on baking pan at 375°F for 8-10 minutes or until cheese is melty.
