Black Bean and Quinoa Burger

I voted.

Yes, I am a good citizen and voted. It took me THREE TRIES to get registered but I finally did it. Apparently having your cable, water and electric included in your rent fee isn’t all that it’s cracked up to be because then you have zero bills to your address. I had to use a lease agreement that had my name spelled wrong.

Uh.. For real?

But here’s some dinner for you. Wednesdays can be a little rough. They’re hump day, which is all happy-go-lucky, but if you’re waking up and it’s dark outside and you have somewhere to go before 10am, (or, really, before 7am?) it can still be a rough day.

I thought I would throw a burger at you. No, not that kind of burger. After reading this book, I will never ever eat a burger. Apparently neither will this girl. Yes, she has joined us in vegdom. I think this calls for a celebration. A bean burger celebration, obviously.

Black Bean and Quinoa Burger
Adapted from The Vegetarian Times

Burgers:
1 tsp olive oil
1 garlic clove, minced
1/2 onion, finely chopped
1/4 c chopped tomatoes
1/4 tsp dried oregano
1/4 tsp black pepper
1/4 tsp garlic pepper
1/4 tsp dried parsley
1/4 c quinoa
1/2 15 oz can black beans
1/4 c whole wheat flour
Extra:
Buns
Spinach and/or arugula
Fresh basil
Tomato
Honey mustard
1. Heat olive oil in skillet and cook garlic, onion and tomatoes on medium heat until onions become translucent.
2. Meanwhile, cook quinoa according to directions.
3. Add spices and black beans to vegetables and cook for a few minutes. Mash black beans with a fork or spoon while cooking.
4. Combine mashed vegetable and bean mixture with quinoa. Add flour to mixture and form patties.
5. Bake at 350°F for 20 minutes on sprayed baking pan, flipping halfway in between.
