Pumpkin Spice Hot Cocoa

Can we just talk about how brilliant Thomas Edison was? I mean, come on. He called it waaaay before anyone else did.

On a totally unhealthy (but maybe semi-healthy?) note, I made some cocoa for you. In honor of… my birthday.

And yes, that amount of whipped cream is totally necessary. Birthday girls get extra whipped cream.

Pumpkin Spice Hot Cocoa

2 tbsp water
2 tbsp sugar
1 tbsp cocoa powder
3-4 tbsp canned pumpkin
1 c plain almond milk
1/2 tsp vanilla
1/4 tsp cinnamon
Whipped cream

1. Combine water, sugar, cocoa and pumpkin in a small saucepan over low heat. Stir for a couple minutes until a thick paste forms.
2. Add cinnamon, milk and vanilla. Stir to combine. Continue to stir as you increase the heat until your reach the desired heat.
3. Top with whipped cream.
