Pumpkin Pie Oatmeal

I don’t know what has gotten into me. I saw something on Pinterest that was Christmas-related and I… (gasp) was excited for Christmas.

Christmas is one of things that is really great but sneaks up on you wayyy to fast. And when this Christmas rolls around, it’s going to be really bittersweet. Like, really bittersweet to the point that we aren’t talking about it. Okay??

Anyway. I am excited to make Christmas cards and bake lots of Christmas goodies.

Okay. Enough of that. Let’s focus on this season. Full of pumpkin and crunchy leaves and apple cider, which, I bought yesterday. Yum. This pumpkin pie oatmeal is spot on. And super filling. So you should eat this if you have a long day ahead of you or are super hungry because you’re coming off your food log for class and have eaten less in order to not have to do such a thorough food log. It’s senioritis, people. Don’t hate the player. Hate the game… right?

PS: I apologize for my photos. My camera was being cracked out when I took this. Or maybe because I didn’t have my contacts in and I was super hungry and wanted to eat this at 830am?

Pumpkin Pie Oatmeal

1/3 c Greek yogurt
1/3 c canned pumpkin
1/3 c plain almond milk
1 tsp vanilla
1 tbsp brown sugar
Pinch of cinnamon
Pinch of nutmeg
1 tbsp cream cheese

1. Combine all ingredients except cream cheese. Refrigerate overnight.
2. In the morning, top with granola and cream cheese.
