Indian Quinoa

Sometimes life is all about coping. Finding ways to help you get through your day. Finding little things that make you feel better and put a smile on your face.

Right now, for me, that is this song. I was studying last night for my kinesiology exam (or, “Neuromotor Control” as it is now called) and that song came on my Pandora and I literally stopped everything I was doing, threw my hands up in the air and started moving my body in ways that I am happy no one was around to see.

I jumped out of my chair, threw off my men’s flannel shirt and started doing pushups and sit-ups to this song in my tank top and polka dot pajama pants.

I am also making time for New Girl. DUH. I have been catching up because apparently there were two last week that I missed. New Girl is seriously what gets me through this life. Got me through organic chemistry. It will get me through anything.

PS: Indian quinoa. Go.

Indian Quinoa
Adapted from The Tiffin Box

Quinoa:
1/2 c quinoa
1/2 tsp curry powder
1 can chickpeas
1 tomato, diced
1/4 onion, diced

Dressing:
1 tbsp olive oil
1 tbsp lemon juice
1 tsp spicy dijon mustard
1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp curry powder
1 tbsp plain Greek yogurt

1. Cook quinoa according to directions.
2. Combine quinoa with remaining “quinoa” ingredients.
3. Combine dressing ingredients and pour over quinoa. Mix well.
