Individual Mushroom Pizza

Life teaches us a lot of lessons. New lesson: never, even if it’s THE most beautiful day, leave your car windows rolled down.

I learned this the hard way. Aren’t all lessons learned the hard way? I saw the web and thought, Oh, no.  THEN I saw the spider. Luckily, it was a small spider. But that thing was on the move. It scurried over into this little crack near my head, so I watched it. 90% watching the spider. 10% watching the road. I survived, thank goodness.

The only thing scarier than seeing a spider is looking away and it being gone. I could see a couple legs so I hoped for the best and waited until I parked to smoosh it.

As soon as I parked, of COURSE it scuttled farther into the crack. Gone forever. Or at least until I’m not expecting it and it falls on my face mid-drive.

Individual Mushroom Pizza
Adapted from Body Rock TV

1 portobello mushroom
2 mini sweet peppers, chopped
2 tbsp onion, chopped
1/4 c spinach
1 tbsp cheese
2 tbsp pizza (or pasta) sauce
2 tsp olive oil
1/4 tsp dried parsley
1/4 tsp dried basil
1/4 tsp dried oregano

1. Preheat oven to 400°F.
2. Heat 1 tsp olive oil in saucepan on stove. Saute onion and peppers on medium high heat for 2-3 minutes. Take off heat. Add spices and spinach and stir to combine.
3. Remove weird stringy things in mushroom (I have no idea what they’re called, but basically just make room for the mixture).
4. Spoon mixture into mushroom and top with sauce and cheese. Drizzle remaining 1 tsp olive oil on top.
5. Place mushroom on sprayed cooking sheet and cook for 12 minutes.
