I’d like to write something witty today.
Something cute and funny, something that would keep you wanting more. But I can’t. Today is Monday, the start of a full week, the beginning of real class. My brain is dead and anxious about the awaiting 3 months.
Last night I was in the library for over 3 hours a) because I had a lot of work to do and b) because there was a GIANT MONSOON.
For real. Serious thunder and lightning and rain so hard that I could hear it pounding on the roof of the library despite being locked in a tiny study room with a dry erase board (I did, however, memorize all 20 amino acids). I was hoping it would slack off by the time I left… nope.
While I’d rather be cuddled up in my giant white blanket, eating these pancakes and watching New Girl in bed, I’ll settle for these healthy cottage cheese pancakes totally “ruined” with mocha cappuccino spread.
Cottage Cheese Pancakes
Adapted from The Chic Brulee
1/2 c low fat yogurt
1/2 c low fat cottage cheese
1 tbsp sugar
1/2 c whole wheat flour
1/4 tsp baking soda
1. Combine all.
2. Spoon onto greased pan and cook on medium heat until bubbles form. Flip.
3. Top with strawberries and Jif Mocha Cappuccino spread.
