Hello, my name is Kaylie… and I’m a total and complete hypocrite.
Remember when I was complaining about those girls who watched shows and movies while they were on the treadmill and elliptical? I wish I had the link to show you but… I have no idea which post that was. Anyway, it went something like this. “People who watch shows on their iPads or iPods while they workout clearly are not getting a good workout..” Yeah. Something like that.
Well, today I realized why those people do that. They hate working out. Ever since I screwed up my knee a few months ago, I’ve hated exercising. I can’t run. I can’t cycle. I can’t jump or do squats or lunges. All I can do is upper body and some walking or the elliptical. And even that hurts.
So, I signed up for the free month of Netflix. And let me just tell you. I am addicted. I watched the pilot of Grey’s Anatomy while doing 25 minutes on the elliptical and 20 minutes on the treadmill and helllooooo new workout distraction. While I could easily bang out 45 minutes on the bike no problem, I get unbelievably bored with the elliptical and treadmill.
World, I apologize. I was wrong. You were just one step ahead. As usual.
Veggie Pizza Enchiladas
Inspired by Picky Palate
1 c (approx) pasta (or pizza) sauce
1/2+ c shredded 4-cheese mixture
1. Preheat oven to 350°F.
2. Spoon a little pasta sauce on the bottom of your small baking dish.
3. Spoon about 1 tbsp pasta sauce onto each tortilla, and top with vegetables and cheese.
4. Roll tortillas and place in baking dish.
5. Top with pasta sauce and cheese.
6. Bake for 15 minutes, or until cheese is hot and melted.
