Today I take the GRE.
As in, in less than 2 hours I will be sitting in that sterile, scary, straight-laced room with computers and headphones and proctors with security wands.
I am not a good standardized test taker. There are two kinds of people in this world. The people who are awesome test takers and the people who are not. The people who crumble and fall and have mental breakdowns and want to curl into tiny balls in their bed and never resurface because who the heck knows what “opprobrium” means??
You know what I am good at, though? Cooking. And these babies are delicious. Sweet potatoes are first of all yummy, but at this crunchy topping and you have yourself a wonderful snack, appetizer or side dish.
So, life plan change? Become a chef?
Sweet Potato Bites
Adapted from How Sweet It Is
1 sweet potato, washed
1/2 tbsp olive oil
1/4 c panko bread crumbs
1 tbsp chopped fresh basil
1/2 tsp garlic salt
1 tsp dried parsley
1/2 tsp dried thyme
1 clove garlic, minced
2 tbsp shredded Mozzarella cheese
1. Preheat oven to 425°F.
2. Slice sweet potato into 1/4″ rounds.
3. Combine bread crumbs, herbs and cheese into a bowl.
4. In a separate bowl, combine olive oil and sweet potatoes. Add 1/2 of bread crumb mixture and stir to combine well.
5. Place sweet potato rounds on a baking sheet. Sprinkle remaining bread crumbs on top. Drizzle a little extra olive oil and balsamic vinegar on top.
6. Bake for 25 minutes.
