Blueberry Cucumber Smoothie

I’m starting Gossip Girl over. I’ve never seen all the episodes all the way through, but in high school, it was my Monday night homework break.

Can we just talk about how much Chuck Bass is a creeper? Hitting on Jenny Humphrey at her first party? One time I had a dream that Chuck Bass was a vampire. Wouldn’t he be the perfect vampire? Yess. He’s got that whole old-timey, pale, eloquent prose thing going on.

But here’s the thing. This is a smoothie that people drink after yoga. Or on crash diets. Or on sunny days. It’s healthy and yummy, cool and crisp. The cucumber is refreshing and the blueberries are sweet. And the lemon juice gives it just a little bit of a kick. Embrace the end of summer. Do something fresh.

Blueberry Cucumber Smoothie
Adapted slightly from the Vegetarian Times

1/3 c light coconut milk
1/4 c blueberries
1/2 cucumber, seeded and slightly chopped
2 tbsp lemon juice
1 tsp honey

Blend all.
