Single Lady Chocolate Chip Muffin

Some days you need to do nothing.

You need to lay in bed and then crawl to the couch, Pinterest for hours while watching a good movie, make dinner, give yourself a trendy hairstyle, and then go for a walk and hang out with a friend.

It was a pretty great Friday. What made it even better was this single serving chocolate chip muffin. I am all about the single servings. We all know I have zero resistance. I mean, due to the fact that I just shared this with my friend means that I have an addiction to chocolate. Nutella in particular.

Also, did anyone actually see that guy dancing when it happened? Because my friends and I did and had one of those “Wait, whaaat?” moments and we all just looked at each other and laughed. Roommate bonding.

Single Lady Chocolate Chip Muffins
Adapted slightly from Sally’s Baking Addiction

1 1/2 tbsp whole wheat flour
1/4 tsp baking powder
Dash of salt
1 1/2 tbsp chocolate chips
1/2 tsp vanilla extract
1 tbsp butter
1 tbsp and 1 tsp almond milk

1. Preheat the oven to 330°F. Line muffin tin with one liner.
2. Mix all ingredients, but don’t overmix.
3. Pour batter into muffin liner and bake for 17 minutes.
