I just love the Olympics. Fun fact: I did gymnastics for 8 years. From a wee tot til probably about 10 years old, I leapt and flipped and cartwheeled and did all these crazy gymnastic moves.
Whenever I watch the Olympics I think, What if that had been me? How would I feel standing up there? Have you ever noticed when the gymnast is about to do some really crazy spectacular move how they take a giant breath and stare at their final spot? They are real people just.like.us but with super taut bodies and the media shoved in their faces.
I just wish I had stuck with it longer. Wanna know why I quit? Because when I was 10 and some little 6 year old was doing much better and more intense flips and layouts and shenanigans… I gave up. I decided I hit my plateau and it was time to take up something else.
But whenever I hear that theme song I get really pumped and secretly wish I had stuck with it to prove to that little 6 year old that I was boss. Oh well. She’ll probably be in the Olympics one day.
Coconut Breakfast Quinoa
Adapted from How Sweet It Is
1/4 c quinoa
3/8 c light coconut milk
1/4 tsp cinnamon
1/2 tsp vanilla
1/8 c coconut flakes
1/8 c walnuts
1/2 banana, sliced
1. Combine quinoa, cinnamon, vanilla and coconut milk in a small saucepan. Bring to boil, stirring frequently, then cover and simmer for 15 minutes.
2. Toast walnuts on medium heat in skillet, stirring frequently, until flavorful and golden.
3. Toast coconut flakes on medium heat, stirring frequently, until slightly golden on edges.
4. Combine quinoa, nuts, and coconut. Top with banana. Drizzle extra coconut milk on top.
