Okay, now I realize this may not look the most appetizing, but it is. It’s good. And it’s one serving. I know it looks a little soup-like, but that’s just the melty cheese trying to fool ya. If you want a little less soupness, try using a bit less milk. Or water. Experiment with it.
This is one of those home-alone-and-cuddled-up-with-every-Channing-Tatum-movie kind of dinners.
Now, I added a little extra cheese in this recipe because, let’s face it, everything is better with cheese. Everything in moderation, including moderation. That basically means “add on the cheese!” because this week has been rough and tiring and stressful and it’s a mac ‘n’ cheese kind of night.
Single Lady Mac ‘n’ Cheese
Adapted slightly from Babble
1/3 c pasta
1/2 c water
1/4 c plain soymilk
1/2 c shredded cheddar cheese, plus more for sprinkling on top!
Pinch of red pepper flakes
Pinch of dried basil
Pinch of dried oregano
1. Cook pasta and water in a bowl in the microwave. You might want to put a plate underneath it because it may overflow a bit. Cook in 2 minute intervals, about 4-6 minutes total, stirring every 2 minutes until pasta is cooked.
2. Add the milk and cheese, stir, and microwave for 1 more minute.
3. Stir in spices and add extra cheese.
