Jalapeño and Zucchini Pasta

I like challenges. I did a 14-day yoga challenge, a 7-day vegan challenge, a lifelong (after 17 years of age) vegetarian challenge… I think it’s fun.

So, starting in August I’m doing a handwritten letter challenge. I think there is something quite beautiful about handwritten letters. They’re romantic and eloquent and old-fashioned.

I will write 52 letters. One letter a week for every week of the year from August 2012 to August 2013. These letters will go to friends and family, but I think they should branch farther. Assuming other people besides my friends read this blog (right??), I would love love love to write to strangers. Well, not strangers. Friends I haven’t met yet. Because getting handwritten letters in the mail totally makes you friends.

They are colorful and cute and whimsical and trust me, you want one. It will make your day. When have you ever been disappointed about getting a handwritten letter? Oh, that would be… never.

Jalapeño and Zucchini Pasta

1 c sea shell pasta
1 zucchini, thinly sliced
1 jalapeño, finely chopped
1 clove garlic, finely chopped
1/8 c finely chopped parsley
1/4 tsp black pepper
1 tbsp nutritional yeast
1 tbsp olive oil
Zest and juice of 1 lime

1. Cook pasta.
2. Add remaining ingredients.
3. Toss to combine.
