Steamed Carrots with Lemon Dill Butter

May I just apologize in advance for the fact that this food and the bowl are the exact same color? Thanks, just wanted to get off my chest. I was clearly hungry and not thinking about this.

Let me also just tell you about steaming vegetables. Oh wait. I have no idea. Yep. I thought steaming vegetables was easy – and it probably is! – but I’m pretty sure I only half steamed these babies because I have zero clue how to steam veggies and they were a bit crunchy. But delicious. Honestly, if I had completely steamed them I probably wouldn’t have liked them because I don’t like mushy carrots. Yuck.

And my statement holds true that you can stick lemon or dill on just about anything and it will taste delicious. Same with Nutella, but Nutella and carrots…? Not so much. Maybe Nutella carrot cake? Hmm.. in the near future?

Steamed Carrots with Lemon Dill Butter
Adapted from Vegetarian Times

1/2 c carrots
1 tbsp lemon juice
1/2 tsp dried dill
1/2 butter, cut into pieces

1. Steam carrots in a pot over simmering water for 7-9 minutes.
2. Combine remaining ingredients.
3. Pour over carrots and mix.
