Tomato and Garbanzo Bean Salad

Do you know what a gym rat is?

Okay, that term sounds a little offensive, but basically it’s a person who lives in the gym and drinks protein shakes and grunts when lifting weights and has biceps bigger than their head.

Well, since I go to the gym almost every day at approximately the same time, I see the same people (wait – does that make ME a gym rat?!). There is a group of about 4-5 people who are friends because they go to the gym at the same time every day. And they have nothing to talk about but benching and chocolate whey powder and spandex. Or something.

The point of this excessively long story is that one of them smiled at me. Like, a big smile that you would give to someone you know. And I did the really awkward half smile – half turn around to see if there is someone behind me. There wasn’t…

Later that same day, he handed my workout routine to me because he thought I had dropped it. And even later, he waved goodbye to me. Like, to me. I could tell this time. And it was a wave. A wave!

I think he’s trying to recruit me into their little group. It’s happening! I’m turning into a gym rat. Helllllp! Good thing I’ll be back in the ol’ college town in T-16 days.

Tomato and Garbanzo Bean Salad
Adapted slightly from Vegetarian Cooking for Dummies

1 can garbanzo beans, drained and rinsed
2 homegrown tomatoes, chopped
2 green onions, chopped
2 tbsp fresh basil, chopped
3 tbsp fresh parsley, chopped

1 tbsp lemon juice
1/2 tbsp red wine vinegar
1 tbsp basil olive oil
1/2 tbsp salsa
1/4 tbsp chili powder
1/4 tsp tarragon
1/4 tsp black pepper

1. Combine all salad ingredients.
2. Combine dressing ingredients.
3. Pour dressing over salad and chill for at least 1 hour.
