It’s July. Happy July! When did that happen? And what better way to celebrate the beginning of a new month than with a new recipe and a new product.
Lifeway is this really snazzy company who very kindly allowed me to try their kefir products. I have heard of kefir, and while I still am not sure if I’m pronouncing it correctly, I was intrigued. There are tons of different flavors, including peach, blueberry and mango, but I chose raspberry.
The combination of raspberry and chocolate is a heavenly one. I substituted the milk with kefir and added some raspberries and helloooooo. New favorite pancake recipe.
I would absolutely use kefir again in my recipes. I don’t know if it would work in any baking recipe, but it added a certain fruitiness and a thickness to the pancakes that was simply divine. And don’t even get me started on their frozen yogurt…
Raspberry Chocolate Pancakes
Adapted from Reese Cup Pancakes
3/4 c flour
1/4 c cocoa powder
1 tsp baking powder
1/2 tsp baking soda
3/4 c raspberry Kefir
1/4 banana, mashed
1 tbsp raw sugar
1 tsp vanilla
1 tsp melted butter, cooled to room temperature
1/2 c raspberries
1. Combine all ingredients.
2. Grease skillet on medium heat on stove.
3. Ladle about 1/3 c of batter onto skillet.
4. Place a few raspberries onto each pancake before flipping.
5. Flip when bubbles start to form.
