Life is all about the people in it.
My friend and I had planned dinner for weeks. The pressure was building. He knows I’m a veg and I know he’s a carnivore. So, I had to impress him with veg food.
We tossed around several ideas, and one night before drifting off to sleep he texted a rambling “tabouli.. pitas…” Well, I have no clue what tabouli is or where to find it, so I threw that out the window and opted for pizza. Everyone likes pizza, right??
I’ve always wanted to do a gourmet fruit pizza, so I decided to do that. I had just bought fresh goat cheese a week ago, and we have an abundance of cilantro in the house.
Cilantro pesto + goat cheese + summer fruit = gourmet pizza. And what does a fancy, gourmet pizza do? Stir up fancy conversations.
We talked about Forks Over Knives, Food, Inc., local food, the meat industry… It was the coolest thing ever. Having an educated conversation with someone about food who isn’t a vegetarian is so refreshing. So was the Pinot Grigio, but that’s another story.
Seize your summer. Call up a friend, whip up an easy, gourmet meal, and share it over wine and intellectual conversation on the back deck.
You might even learn a thing or two – apparently, disposals can’t totally chop off your fingers unless you put your fingers towards the edges of the disposal. Fun. Fact.
Summer Fruit Pizza
1 whole wheat pizza crust
1 peach, sliced
1 plum, sliced
1/2 c blackberries
1/4 c goat cheese
Cilantro pesto (recipe below)
1/2 c cilantro
1/4 c olive oil
1/8-1/4 c parmesan cheese
2-3 tbsp lemon juice
1. Place all pesto ingredients in a food processor and blend.
2. Spread pesto on pizza.
3. Top pizza with cheese and fruit.
4. Cook according to directions.
