This is another one of those “Seriously, Kaylie, you think we need a recipe for this?” But actually, it’s an inspiration. It’s to remind you that lunch doesn’t need to be fancy or time consuming.
It also doesn’t need to be McDonald’s or Chick-Fil-A. You can make something fast and delicious and healthy at home that travels well and will keep you satiated.
I lovelovelove peanut butter and banana sandwiches and had one every Wednesday in the Fall because I had class, class, lab, and then class – which meant no time for lunch at home and I had to bring something to class. But you know how some people say it’s “too much bread?” I never felt that until recently. But now that I eat Sandwich Thins and wraps, I realize that regular bread is a lot of bread.
This is not a lot of bread. This is not a lot of peanut butter. Or, it can be if you want it. Add chocolate chips or honey or whatever you want. Apple slices? Do it. Nutella? Even better. This is versatile and easy and perfect for on-the-go.
And my life defines on-the-go.
Also – shout out to all the dads in the world. Happy Father’s Day! Dad’s are pretty freaking awesome.
