Eating something hot right out of the oven always burns your mouth. Duh. We’ve known this since we were children. Still, I eat that cheesy bread or brownie and scorch my mouth. Smart.
While I may be hard-headed and stubborn – and those of you who know me personally know this is true – I can be swayed. I always thought feta and watermelon was the hands down strangest combination I had ever heard of. Why would you ever want to mix fruit with cheese?
I mean, yes, sweet cheeses are good with fruit. Like goat cheese or brie on a spinach salad with plums or berries – that’s delicious. But watermelon isn’t exactly something you throw into a spinach salad.
But this, my friends, is good. The rumor is true. Feta and watermelon are an epic combination. The watermelon is sweet and watery and the feta has a slightly salty bite. And the basil wraps it all together. And – obviously – quinoa for a ton of vegetarian-friendly nutrients.
Watermelon and Feta Quinoa

1/2 c quinoa, cooked
1 c watermelon, chopped
1 tbsp honey
1/4 c crumbled feta cheese
2-3 giant basil leaves, chopped
2 tbsp lime juice
1 tsp lime olive oil
