Aaand the yoga continues.
Today is Day 10, marking the 1/3 point of my 30-Day Challenge. I’m starting to feel it. Mentally, I’m becoming a little tired of yoga. Physically – well, everything in my body is cracking and popping and instead of getting more flexible, I feel like it’s getting tighter.
You know it’s a hard class when down dog is a resting position. You know it’s a hard class when you’re the youngest one there (aka everyone is 40+ and fit as a horse) and have to go down to child’s pose without instruction. Or, maybe I’m just weak.
All this exercise is making me hungry, though. Hungry for quinoa! Duh. I’m always hungry for quinoa. It’s super versatile and taking over a good chunk of my recipe list. Speaking of recipes, I have been dying to make scones for weeks and haven’t had time. Seriously. Seriously. (That was a Grey’s Anatomy reference for those of you who don’t watch it. And if you don’t, stop whatever you’re doing right now and watch the season finale. Just, do it.)
There just isn’t enough time in the day. Not enough time to cook or bake or read or watch a movie or, even, study for GREs or work on my research paper or check out grad schools or start applications or SLEEP.
(However, I am making time for a bath every night. Hey – I need some kind of indulgence.)
Make time in your day for something healthy. Make some quinoa. Add some spinach. I told my dad to put some spinach on his sandwich – he’s on a health kick and has been eating in for lunch everyday and making sandwiches – and… he did it! YAY. Super. Proud.
Spinach Quinoa Salad
Adapted slightly from Miss Kait Online
1/2 c spinach
1 tomato, chopped
1/4 c quinoa
2 tbsp basil olive oil
1 tsp dijon mustard
1 tbsp agave syrup
1 tsp balsamic vinegar
1 tbsp lemon juice
1. Mix salad ingredients.
2. Mix dressing ingredients.
