Hi, I’d like to preface this by saying that I sincerely apologize for the terrible pictures. I had class then yoga then had to run to the grocery store and by the time I got back, it was 8:30pm and there was ZERO sunshine and natural light, so this is all artificial light butttttt this recipe is way too good to keep to myself, so I’m sharing with you. Okay. Thanks for bearing with my crazy schedule and life. I promise to keep you entertained with better pictures and delicious recipes in the future.
Today is day 3 of my 30-day yoga challenge. For real, people. I am sore. I didn’t think I would get this sore this fast. Granted, I haven’t been able to do any legs or cardio for 3 weeks because I hurt my knee… but still. This is a little ridiculous. My legs hurt. My shoulder is sore. Things are carazzzy. And this is only 1/10 of the way done.
Anyway, last night I watched Pirates of the Caribbean 4. These are getting a little ridiculous. Do you really need 4? And those mermaids were insane. I thought mermaids were nice! I seriously did. My friend told me that they’re evil. Ruined all my hopes and dreams. I feel like I want to be a mermaid and be nice and break the long-standing tradition of evil mermaids. I guess Arial did that, but still. We need a modern mermaid. Like me.
Summer is supposed to be for movies, right? Riighttt??? Well, apparently it’s not. Apparently this summer is full of organic chemistry out the wazoo. I woke up this morning and realized it was Wednesday and had a minor panic attack because that means that it’s almost Friday. The day of our test. Dooms day. I might die. So, if all of a sudden there are no more posts on Skinny Muffin, you will know… I have died. Hopefully in a good way. Hopefully I drowned my sorrows in mojitos and Nutella and am in a better place.
Well, that’s morbid. Totally kidding – I will survive. But, some mojitos and Nutella may be in order to survive these next… what, 9 weeks? 8 1/2? But I promise, a moderate amount of both. Well, I make no promises with Nutella, actually. Ooh, speaking of Nutella, I should totally make Nutella pancakes. On. My. Horizon… Get. Pumped.

Chocolate Strawberry Cheesecake Pancakes
Adapted slightly from Cake Batter and Bowl
3/4 c flour (more if batter is too runny when all ingredients are combined)
1/2 c graham cracker crumbs (approximately 3 crackers pulsed in food processor)
1 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 c buttermilk
2 tbsp butter, melted
3/4 tsp vanilla extract
1 c sliced strawberries
2 tbsp chocolate cream cheese, plus more for topping
1 tbsp milk
1. Mix flour, graham cracker crumbs, sugar, baking powder and soda, and salt.
2. Add in egg, buttermilk, melted butter, vanilla extract, cream cheese and strawberries. Combine all.
3. Make pancakes (medium heat… flip when bubbles form…)
4. For topping, mix 1 tbsp milk for every 2-3 tbsp chocolate cream cheese. Mix to combine and drizzle over pancakes. Top with strawberries.
