Whole Wheat Greek Yogurt Pancakes

Hello, pancakes.

It has been a while since I have had you. I guess the last time I had you was at Easter when I made a delicious key lime version. Helloooo, deliciousness.

Sometimes, though, it’s nice to have a bit of a healthy spin to pancakes. The batter to these pancakes is super healthy. Whole wheat flour, no sugar, and egg whites. Yes, yes, and yes. And what better way to counteract this healthiness than with…

Cookie Butter. Duh. I slathered that stuff all over these pancakes. They were practically swimming – or should I say.. drowning – in it. Now, these pancakes are dense. Like, super dense. So, if you want less dense pancakes, you might want to use less flour. But I liked them. Dense pancakes keep me fuller for longer.

Also, can we please note that I am still using my wintertime plates? I need to get some new plates… Anyone want to come vintage and antique shopping with me? Hmm?

Greek Yogurt Pancakes
Adapted from Healthy Berg

1/4 c whole wheat flour
1/4 c old fashioned oats
1 tsp baking powder
1/2 c plain Greek yogurt
1 egg white
1 tsp vanilla
2 tbsp water (or more to make batter runnier, if desired)
Trader Joe’s Cookie Butter

1. Combine dry.
2. Combine wet.
3. Mix wet with dry.
4. Make pancakes.
5. Top with Cookie Butter and sliced strawberries.
